First of all, these projects were so cool! In class, we worked with two projects we called the Tempera Circle Project and The Big Weave.
For the Tempera project we started by each student placing a dot some where on the paper in all different colors. We then traded spots continuously around the table drawing a circle around the last persons color in our own color.
For high school, I might try having them create a much larger mural, perhaps having to use smaller brushes and neater lines to increase difficulty.
For middle school, I may use it to have them learn and focus on color relationships.
For elementary school, I really think I would keep it pretty much the same as above and let them be more creative with their lines and shapes.

For the weave project, the teacher cut a large piece of paper into a wave-y design. We each picked different colors of paper and glued them together, then took turns weaving them through the bigger paper.
For high school, instead of using paper, I would probably have them use more traditional weaving materials with more intricate designs.
For middle school, I would probably have them cut their own "loom," with directions to use a unique design and, again, focus on some color relationships in the paper they use.
